Stir-Fried Carrots

Ingredients:

8 oz. carrots
4 green onions
1 clove garlic
1 serrano pepper
4 Tbs. chicken stock
1 to 2 Tbs. vegetable oil

Prep time: 20 minutes
Yield: 3 servings

Peel, wash, and cut carrots into matchsticks. Slice green onions and pepper. Crush garlic. In a wok, heat oil. Sauté green onions and pepper for 1 minute. Add garlic and carrots. Stir continuously for 1 minute. Add stock. Cover and cook for 4 minutes. Uncover and cook for 2 minutes, stirring continuously.
