Roasted New Potatoes

Ingredients:

2 1/2 lbs. small red new potatoes, halved
1/4 cup olive oil
4 cloves garlic, coarsely chopped
2 tsp. dried thyme
freshly ground pepper, to taste

Prep. time: 45 minutes
Yield: 4 servings

Preheat oven to 375º F. In a large pot, bring water to boil, add potatoes. Bring back to a boil, then reduce heat. Cover partially and cook for 5 minutes, drain. Combine oil, thyme, and pepper in a large bowl. Add hot potatoes and coat well. Arrange potatoes in a single layer in a baking dish. Bake 20 to 25 minutes, or until tender and golden brown.
