Quick Veggies

Ingredients:

Mashed Sweet Potatoes
Fill a dutch oven halfway with water. Bring to a boil. Peel and coarsely chop four large sweet potatoes. Add to boiling water. Boil for 8 to 10 minutes. Drain. Mash in a large bowl and serve with reduced-fat margarine.

Baked Sweet Potatoes
Wash sweet potatoes and prick several times with a fork. Place directly on the rack of a 400º oven. Do not wrap in aluminum foil. Bake for 1 hour.

Fruit and Spinach Salad
Thoroughly wash 1/2 package raw spinach leaves. Chop into bite-size pieces. Toss with one 11-ounce can of mandarine oranges and two peeled and chopped granny smith apples.

Fresh Green Beans
Wash beans thoroughly. Snap off ends, snap each bean into two or three pieces. Fill saucepan with 2 inches of water and place steamer basket in pan. Add beans, a pinch of thyme, and several bay leaves. Cover. Steam for 15 to 20 minutes.

Yellow Squash
Wash four yellow squash and trim ends. Quarter each squash lengthwise and remove seeds. Cut into 1/4 inch pieces. Simmer squash, 1/4 cup water, and a sprinkle of salt and pepper in a covered pan for 15 to 20 minutes. Remove from heat and drain. Mash with a potato masher.

Honey-Lemon Carrots
Fill a medium saucepan halfway with water. Bring to a boil. Add 1/2 pound peeled and sliced carrots. Boil for 8 minutes or until carrots are crisp-tender. Drain. Mix 2 Tbs. honey, 2 Tbs. lemon juice, and a dash of allspice in a small bowl. Drizzle over carrots.

Corn on the Cob
Place two to four fresh or frozen ears of corn in a shallow microwave-safe dish. Add 1/2 to 1 cup water and sprinkle with thyme. Microwave on HIGH for 6 to 8 minutes. Coat each ear with a small pat of reduced-fat margarine.

Microwave Potatoes
Peel and slice four large baking potatoes. Layer several slices in the bottom of a microwave-safe dish. Add a dash of salt and pepper and several small pats of reduced-fat margarine. Repeat layering with remaining potato slices. Cover and microwave on HIGH for 10 to 15 minutes.

Lemon Broccoli
Steam three cups chopped broccoli for 5 to 6 minutes. Toss with 1 Tbs. lemon juice.
