Quick Potatoes

Ingredients:

1 Tbs. olive oil
1 large onion, chopped
2 cloves garlic, minced
1/2 cup chopped sweet red pepper
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. hot sauce
3 cups unpeeled cubed potatoes
2 Tbs. butter or margarine
1 cup cubed ham

Prep time: 1 hour 30 minutes
Yield: 4 servings

Preheat oven to 400º.

Heat olive oil in a 10-inch cast-iron skillet. Add onion and garlic; cook over medium heat, stirring constantly, until tender. Stir in red pepper and next 3 ingredients; cook 2 minutes, stirring constantly. Add potatoes, ham, and butter, stirring well.

Bake for 50 minutes. Watch carefully so it doesn't over-brown.
