Mom's Sweet Potato Casserole

Ingredients:

1 large can sweet potatoes (1 lb. is too much), drained and mashed
3 eggs, slightly beaten
1/2 cup brown sugar
1 stick butter, melted
1 tsp. vanilla
1/2 stick butter (optional)
1 cup corn flakes, crushed
1 cup pecans, chopped

Prep time: 45 minutes
Yield: 8 servings

Preheat oven to 350º.

In a 2-quart casserole dish, combine sweet potatoes, eggs, brown sugar, and melted butter.

Combine butter, corn flakes, and pecans. Sprinkle over sweet potato mixture.

Cover with foil and bake for 25 minutes. Uncover and bake 5 minutes more.
