Leesa's Sunday Night Fritatta

Ingredients:

2 Tbs. vegetable oil
1 1/2 cups frozen vegetables
1 cup frozen hashbrowns
1/2 onion, chopped
1/4 cup fresh parsley, chopped
2 serrano peppers, chopped
4 cloves garlic, chopped
5 strips bacon, cooked and chopped
8 to 10 eggs
Salt and pepper

Prep. time: 45 minutes
Yield: 3 to 4 servings

Preheat oven to 350º. Heat a 9-inch cast-iron skillet over medium heat. Heat vegetable oil in skillet; add frozen vegetables and next 5 ingredients. Sauté until browned. Add bacon.

In a glass bowl, beat eggs. Add salt and pepper to taste. Pour over mixture in skillet. Remove skillet from stove and bake for 30 minutes or until center is set.
