Ingredients:
6 sweet potatoes or yams
2 to 3 cups orange juice
2 slices fresh ginger or 1 pinch nutmeg (optional)
1/2 cup maple syrup or brown sugar
3 Tbs. butter
Salt and pepper to taste

Prep time: 40 minutes
Yield: 8 servings
Peel sweet potatoes and cut into quarters. Bring orange juice and ginger or nutmeg to a boil in a medium saucepan. Add sweet potatoes and cook, covered, until slightly soft (about 20 minutes). Drain.
Melt butter in a skillet; add maple syrup or brown sugar. Stir in the cooked potatoes. Salt and pepper to taste. Serve hot or cold.
This recipe is also nice with brussel sprouts or carrots, using less maple syrup or brown sugar and adding 1/4 tsp. dijon mustard.
