Rachel's Thai Shrimp Soup

Ingredients:

1 lb. frozen shrmp
1 clove garlic
2 green onions, chopped
2 cans coconut milk
1/4 cup chopped fresh cilantro
2 Tbs. red curry paste
1 cup cubed crimini mushrooms
2 dashes salt
juice from two lemons or chopped fresh lemon grass

Prep. time: 25 minutes
Yield: 2 servings

Combine all ingredients in a large saucepan; bring to a boil. Reduce heat and simmer until shrimp are fully cooked.
