Mom's Tortilla Soup

Ingredients:

1 small onion, chopped
1 small fresh jalapeño, seeded and chopped
2 cloves garlic, minced
2 lb. stew meat or chicken
2 Tbs. vegetable oil
1 16-oz. can stewed tomatoes
1 10-oz. can tomatoes and green chiles
1 10.75-oz. can beef bouillon
1 10.75-oz. can tomato soup
1 1/2 cups water
1 tsp. ground cumin
1 tsp. chili powder
1 tsp. salt
1 Tbs. fresh cilantro
12 corn tortillas, cut into 1/2-inch strips
1/2 cup grated Cheddar cheese

Prep time: 1 hour 30 minutes
Yield: 6 servings

Sauté onion, jalapeño, garlic, and meat in oil. Add tomatoes, soups, water, and seasonings. Bring to a boil. Lower heat. Simmer, covered, 1 hour.

Add tortilla strips and cheese to soup. Continue cooking 15 minutes. Or serve tortilla strips and cheese on the side.
