Ingredients:
1 single pie crust, unbaked
3 eggs
1 cup sugar
1/2 tsp. salt
1/3 cup melted butter
1 cup light corn syrup
1 cup pecan halves
1 tsp. vanilla or 1 Tbs. rum

Prep time:1 hour
Yield: 8 servings
Preheat oven to 425º for at least 20 minutes. Bake pie crust for 7 minutes. Allow it to cool. Reduce heat to 375º.
Combine eggs, sugar, melted butter, and corn syrup. Beat thoroughly. Stir in pecan halves and vanilla or rum. Pour mixture into the pie shell. Bake for 40 to 50 minutes or until a knife inserted in the filling comes out clean.
