Grandma's Coconut Cream Pie

Ingredients:

1/4 cup cornstarch
2/3 cup sugar
1/4 tsp. salt
2 cups milk, scalded
3 egg yolks, slightly beaten
2 Tbs. margarine
1/2 tsp. vanilla
1 pkg. coconut
1 pie shell, baked
3 egg whites
6 Tbs. sugar

Prep time: 1 hour
Yield: 8 servings

Preheat oven to 350º.

Mix cornstarch, sugar, and salt. Gradually add to scalded milk. Cook over medium heat, stirring constantly, until mixture thickens. Add a small amount to eggs; mix well. Add remaining cornstarch mixture to eggs, stirring constantly. Add butter and vanilla; cool slightly. Add coconut. Pour into baked pie shell.

Beat egg whites and 6 Tbs. sugar until stiff peaks form.

Pour meringue mixture over coconut mixture. Bake at 350º for 12 to 15 minutes.
