Pasta with Chicken and Peppers

Ingredients:

1 green bell pepper
1/2 medium onion
1 lb. boneless, skinless chicken breasts
Cajun seasoning
1 Tbs. olive oil
1 large jar commercial spaghetti sauce
16 oz. vermicelli

Prep time: 30 minutes
Yield: 4 servings

Slice pepper into thin julienne strips. Chop onion. Trim fat from chicken, and cut chicken into strips.

Rub Cajun seasoning into chicken strips. Sauté chicken in olive oil over medium high heat until browned. Add onions and pepper strips.

Add spaghetti sauce to chicken-pepper mixture. Cover and simmer over reduced heat for 20 minutes.

Serve over hot vermicelli with Parmesan cheese.
