Mediterranean Pasta

Ingredients:

4 large tomatoes
1 Tbs. olive oil
1 Tbs. red wine vinegar
2 Tbs. chopped fresh basil
1/4 tsp. salt
1/8 tsp. crushed red pepper
1 clove garlic, minced
4 cups cooked angel hair pasta, cooked without salt or fat
1/4 cup (1 oz.) crumbled feta cheese

Prep time: 30 minutes
Yield: 4 servings

Fill a medium saucepan halfway with water. Bring to a boil. Fill a large bowl with ice water. With a slotted spoon, add one tomato to the boiling water. Boil for 1 minute, then submerge the tomato in ice water for 1 minute. Repeat with the three remaining tomatoes. Remove the tomato skins. De-seed and chop the tomatoes.

Combine the chopped tomato, olive oil, red wine vinegar, chopped basil, salt, red pepper, and garlic. Stir well. Let stand 10 minutes. Serve at room temperature over pasta, and sprinkle with feta cheese.
