Italian Pork Noodles

Ingredients:

1 lb. boneless pork loin cut into 1-inch cubes
1/2 tsp. olive oil
1 small chopped onion
1 14.5-oz can diced tomatoes
1 tsp. Italian seasoning
hot cooked noodles to serve four

Prep time: 20 minutes
Yield: 4 servings

Stir-fry pork loin cubes, and onion, in 1/2 tsp. vegetable oil. Stir in diced tomatoes and Italian seasoning. Cover and simmer for 10 minutes. Serve over hot cooked noodles.

Each serving contains 3 grams of fat.
