Great Grammy's Divinity Fudge

Ingredients:

3 cups of sugar
1/2 cup light corn syrup
1/2 cup water
2 egg whites (room temperature)
1 tsp. vanilla
2/3 cup walnuts

Prep. time: 30 minutes
Yield: 24 squares

Place sugar, corn syrup, and water in a heavy sauce pan, cook and stir over heat until sugar is dissolved. Continue heating mixture without stirring until mixture reaches soft ball stage.

Meanwhile, using an electric mixer, beat egg whites until stiff. Pour half of syrup mixture slowly into egg whites; beat while pouring. Return remaining syrup to continue cooking until it reaches the brittle stage. Pour slowly into egg whites. Continue beating mixture until it reaches a non-glossy stage when dropped with a spoon until it holds soft peaks. If too stiff for mixer use spoon for final beating.

Add vanilla and nuts. Pour in a buttered pan.
