Carribean Rice

Ingredients:

2 cups uncooked rice
1 11-oz. can mandarine oranges, drained and coarsely chopped
1 8-oz. can crushed pineapple, drained
1/2 cup chopped red pepper
1/2 cup slivered almonds, toasted
1/2 cup unsweetened grated coconut, toasted
1/3 cup sliced green onions
1/4 tsp. ground ginger

Prep time: 30 minutes
Yield: 6 servings

Combine 4 cups water and rice in a microwave-safe dish. Cook on HIGH for 8 minutes. Stir. Cook on 50% power for 18 minutes.

Combine cooked rice and remaining ingredients in a large pot over medium-high heat. Stir and cook until ingredients are blended and thoroughly heated.

Serves six. Each serving contains 10 grams of fat.
