Broccoli-Cheese Rice

Ingredients:

4 1/2 cups water
2 cups long-grain rice, uncooked
1 cup chopped onion
2 tsp. salt
1 10 oz. package frozen broccoli
8 oz. shredded sharp Cheddar cheese

Prep time: 40 minutes
Yield: 6 servings

Bring water to a boil; stir in rice, onion, salt, and broccoli. Cover, reduce heat, and simmer 25 to 30 minutes or until water is absorbed and rice is tender. Stir in cheese.
