Ingredients:
1 cup buttermilk pancake mix
1/2 cup instant mashed potatoes
1 Tbs. parsley flakes
2 Tbs. minced onions
1 tsp. salt
1/2 tsp. pepper
2 Tbs. vegetable or olive oil
Beer
Flour
Butter (no substitutes)
Partridge pieces

Prep. time: 1 hour 30 minutes
Yield: 6 servings
Mix together pancake mix, instant potatoes, parsely flakes, minced onions, salt, and pepper. Add oil and beer to the mixture to make it like a heavy syrup. Let stand for 1 hour. (Drink the remaining can of beer and open another. This is an important part of this recipe.)
Just before dipping partridge in batter, add more beer to get the mixture back to the consistency of syrup. Drink the remaining beer. Dip partridge in batter and roll in flour and fry in lots of real butter (no substitutes unless you have high cholesterol or a bad heart). While frying do not let the partridge dry up, keep the butter going. Fry to a golden brown on both sides. Enjoy!!
This batter can be made with milk instead of beer but it takes all the fun out of it. You can also use this batter for chicken, turkey, smelts, or whatever you would to try if you want to get a good buzz.
Note: This makes an awful lot of batter; you may want to cut the ingredients in half if you don’t have a lot of partridge.
