Ingredients:
2 skinny loaves french bread
12 walnut halves
1 lb. creme fraiche, at room temperature
5 oz. blue cheese such as Maytag, at room temperature
1 Tbs. Cognac or Armagnac
salt and freshly ground pepper
1 bunch fresh chives, finely chopped

Prep. Time: 30 minutes
Yield: 8 servings
Preheat oven to 350º. Slice the bread into thin rounds and arrange on a baking sheet. Toast for 5 to 10 minutes or until browned.
Process walnuts in a food processor until pieces are coarse, but small. Combine the creme fraiche and blue cheese in a dish and mash them together with a fork, incorporating the Cognac or Armagnac and a little salt and pepper. When the mixture is smooth, add the walnuts and chives. Mix again until well blended. Spoon into a serving bowl and serve with toast rounds.
