Ingredients:
1 lb. sausage
1 onion, chopped
1 clove garlic, minced
1 8-oz. can tomatoes and chiles
1 1-lb. package Velveeta, cubed

Prep time: 20 minutes
Yield: 8 servings
Preheat oven to 375º.
Brown sausage in a large skillet. Drain, reserving 1 Tbs. grease. Set sausage aside. Sauté onion and garlic in grease 1 minute. Return sausage to skillet. Add tomatoes and chiles and Velveeta. Heat through until cheese is melted.
Serve with tortilla chips.
