White Chocolate Macadamia Nut Cookies

Ingredients:

1/2 cup unsalted butter, softened
1/3 cup sugar
1/3 cup brown sugar
1 egg
1 tsp. vanilla
1 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
6 1/2 oz. white chocolate, chopped
3/4 cup macadamia nuts, halved

Prep time: 2 hours
Yield: 4 dozen

Preheat oven to 375º.

Blend butter, sugars, egg, and vanilla until fluffy, stopping once to scrape down sides of the bowl, about 1 minute. Add flour, baking soda, and salt. Mix until just combined. Do not over mix. Stir in white chocolate chunks and nuts.

Drop by heaping tablespoonfuls onto greased cookie sheets. Bake until lightly brown around the edges, about 9 minutes. Cool on the cookie sheets for 5 minutes, then remove to racks to cool completely. Store in an air-tight container.
