Strawberry Sauce

Ingredients:

20 oz. frozen, no-sugar-added, strawberries
2 tsp. lemon juice
1/4 cup sugar

Prep time: 15 minutes
Yield: 8 servings

The night before, place strawberries in a colander. Suspend the colander over a large bowl. Place in the refrigerator to thaw overnight.

Remove from refrigerator. Press the berries to force out the juice until there is 1 1/4 cups juice.

Pour the juice into a 4-cup measuring cup. Place in the microwave UNCOVERED, on HIGH heat, for 3 minutes at a time (stirring in between) until the juice is reduced to 1/4 cup.

In a food processor, purée the strawberries. You should have 1 cup of purée. Stir in the reduced strawberry syrup, lemon juice, and sugar. Process or stir until sugar dissolves.

Store in the refrigerator for up to 1 month, or in the freezer for up to 1 year.
