Milk Caramel (Dulce de Leche)

Ingredients:

1 14-oz. can sweetened condensed skim milk

Prep time: 2 hours 15 minutes
Yield: 8 servings

Place the unopened can of milk in a medium bowl (or the sink). Cover with hot water and let stand for 10 minutes, or until the label is loosened. Scrape off the label and discard.

Place the can in a large saucepan. Cover with water by several inches. Bring to a boil over high heat. Reduce the heat to medium and simmer for 2 hours. Add water as needed to keep the can covered. (Or, cook the can in a pressure-cooker for 25 minutes.)

Remove the can with a ladle and let cool to room temperature. Open the can.
