Ingredients:
1/4 cup fresh lime juice
1 Tbs. soy sauce
1 Tbs. rice vinegar
1 Tbs. finely diced shallot
1 Tbs. finely grated fresh ginger
2 tsp. sugar
2 Tbs. peanut oil
Salt and freshly ground pepper

Prep time: 15 minutes
Yield: 1 cup
Whisk ingredients together in a small bowl. Season with salt and pepper, to taste. Let sit 10 minutes before using.
