Ingredients:
Cake:
4 eggs
2 cups sugar
1 1/4 cups oil
2 cups cake flour
1 tsp. vanilla
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
2 cups grated carrot
1 cup pecans or walnuts, optional
Frosting:
1 8-oz. package cream cheese
1/4 lb. butter or margarine
1 cup powdered sugar
1 tsp. vanilla

Prep time: 1 hour 30 minutes
Yield: 10 servings
Cake:
Preheat oven to 350º. Grease and flour two round cake pans.
Mix eggs, sugar, and oil. Mix together dry ingredients, then add to egg mixture. Add vanilla, carrots, and nuts. Pour batter into cake pans. Bake at 350º for 45 minutes.
Frosting:
Cream together cream cheese, butter, and vanilla. Add sugar slowly until blended. If the frosting is too dry, slowly add milk until the mixture is the right consistency.
