Ingredients:
Cake:
1 box yellow cake mix
1 small box vanilla instant pudding
1 1/3 cups water
4 eggs
1/4 cup vegetable oil
2 cups coconut
1 cup chopped pecans
Icing:
2 cups coconut
4 Tbs. margarine
8 oz. cream cheese
2 tsp. milk
3 1/2 cups powdered sugar
1/3 cup chopped pecans

Prep time: 1 hour 30 minutes
Yield: 12 servings
Cake:
Preheat oven to 350º. Grease and flour a 9- by 13-inch cake pan.
Blend cake mix, pudding, water eggs, and oil. Beat for 4 minutes. Stir in coconut and pecans. Pour into cake pan.
Bake at 35 to 40 minutes until toothpick inserted in center comes out clean.
Icing:
Brown coconut in margarine over low heat, stirring constantly. Cool.
Cream together cream cheese and milk. Mix or beat in powdered sugar. Add coconut mixture (reserving some to sprinkle on top of cake). Add pecans. Spread on cooled cake.
