Frans Cheesecake Squares

Ingredients:

Crust:
2 1/2 cups graham cracker crumbs (or 24 crushed graham crackers)
1/2 cup plus 2 Tbs. melted butter

Filling:
3 8-oz. packages cream cheese, at room temperature
1 cup sugar
1 1/2 tsp. real vanilla
5 eggs

Topping:
2 cups sour cream
1/2 cup sugar
1 1/2 tsp. real vanilla

Prep time: 1 hour 15 minutes
Yield: 100 squares

Crust:
Preheat oven to 300º. Mix graham cracker crumbs, melted butter, and 2 Tbs. sugar. Spray a 13x9" glass dish with vegetable cooking spray. Press crumb mixture into the bottom of the dish.

Filling:
Mix cream cheese, 1 cup sugar, 1 1/2 tsp. vanilla, and eggs well. Pour slowly over crust.

Bake for 45 minutes to 1 hour until firm. Remove and let settle 5 minutes.

Topping:
Combine sour cream, 1/2 cup sugar, 1 1/2 tsp. and vanilla. Spread on top of the filling; bake for 5 minutes.

Cool and keep refrigerated. Cut into 1" squares.
