Mom's Maple-Bacon Oven Pancake

Ingredients:

2 large eggs, lightly beaten
1 1/2 cups biscuit and baking mix
1 Tbs. sugar
3/4 cup milk
1/4 cup maple syrup
1 1/2 cups (6 oz.) shredded cheddar cheese, divided
12 slices bacon, cooked and crumbled

Prep. time: 30 minutes
Yield: 8 servings

Preheat oven to 425º.

Combine eggs, biscuit mix, sugar, milk, and maple syrup in a large bowl; beat at medium speed with an electric mixer until smooth. Stir in 1/2 cup of cheddar cheese. Pour into a greased and floured 13x9" baking dish. Bake for 12 minutes.

Sprinkle with remaining 1 cup of cheddar cheese and crumbled bacon; bake 3 to 5 minutes more, or until a wooden pick inserted in the center comes out clean. Cut into squares and serve with maple syrup.
