Crustless Potato Quiche

Ingredients:

5 eggs, beaten
12 oz. frozen hashbrowns, unthawed
1 cup cheddar cheese, shredded
2 green onions, chopped
1/2 cup cottage cheese
1/4 tsp. salt
1/8 tsp. seasoned pepper
1/4 tsp. dry mustard
1/2 tsp. dried thyme
Dash of hot pepper sauce
Paprika, to taste
6 slices bacon, cooked and crumbled

Prep time: 45 minutes
Yield: 6 servings

Preheat oven to 350º.

Combine all ingredients except for paprika and bacon. Mix well. Pour mixture into a greased 9-inch pie plate. Sprinkle with paprika. Bake for 35 to 45 minutes or until quiche is set. Remove from oven and sprinkle with bacon. Bake for another 5 minutes. Remove from oven and let set 5 minutes before serving.
