Rick's Stromboli

Ingredients:

1 loaf challah bread
1 lb. thinly sliced beef
1/2 cup butter
1 yellow bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 onion, sliced into strips
12 oz. mozzarella cheese, grated

Prep. time: 45 minutes
Yield: 4 to 6 servings

Preheat oven to 350º.

Slice challah loaf in two lengthwise, so you have a top and a bottom. Hollow a small bit of bread out of each half. Place bottom half on a cookie sheet covered in aluminum foil.

Heat a skillet over medium high heat. Sauté beef strips until done. Remove beef from skillet. Add butter to skillet; heat until melted. Add peppers and onion to skillet; sauté until golden.

Add beef back to skillet; combine with vegetables. Scoop mixture onto the bottom half of the challah loaf. Cover in grated cheese. Replace top half of the loaf.

Bake 20 to 25 minutes or until hot.
