Glenda's Quick Bread

Ingredients:

1/3 cup sugar
3 Tbs. instant potato flakes
2 1/2 cups warm water
2 packages rapid yeast
1 tsp. salt
1/2 cup shortening
6 cups bread flour

Prep time: 2 hours
Yield: 3 to 4 loaves

Grease a large bowl. In another bowl, mix all the ingredients and make a stiff batter. Place dough in the greased bowl and brush some oil on the top of the dough. Cover with a cloth and set in a warm place until doubled.

Push dough down and knead well. Divide into 3 or 4 loaves. Knead each loaf 8 to 10 times. Place in greased pans and oil top of each loaf.

Cover and let rise until just about double. Bake at 375š for 35 to 40 minutes.
