Ingredients:
1 1/2 cup sugar
1 1/2 cup water
1 Tbs. freshly grated lemon rind
1 1/2 cup lemon juice (from 7 to 8 lemons)

Prep time: 30 minutes
Yield: 8 servings
In a small saucepan, stir together sugar, water, and lemon rind. Bring to a boil, stirring constantly. Boil for 5 minutes. Remove from heat and let cool. Stir in lemon juice.
Pour syrup into a 3- or 4-quart pitcher. Add 8 1/2 to 9 cups of cold water. Garnish with lemon slices and mint sprigs.
