Ingredients:
1 lime
4 mint leaves
1 Tbs. sugar
1 jigger light rum
7 ice cubes
sparkling water or club soda
Garnish: lime slices

Prep. time: 10 minutes
Yield: 1 serving
Roll the lime on your countertop with the palm of your hand, using enough pressure to loosen it up, but not enough to pop it open. Cut the lime in half and squeeze all of the juice into a tall glass.
Add sugar and mint leaves. Crush together with the back of a spoon until the sugar is dissolved and the mint is pretty beat-up. Add the rum.
Add the ice cubes and enough sparkling water to cover the ice by about an inch. Stir well.
Garnish with twisted slices of lime.
