Ingredients:
1 cup pineapple juice
1/2 cup soy sauce
3 Tbs. brown sugar
2 Tbs. cooking oil
3 cloves garlic, minced
1 Tbs. grated gingerroot
1 tsp. pepper
1 lb. round steak
1 lb. frozen mixed vegetables
2 Tbs. peanut oil

Prep time: 45 minutes
Yield: 4 servings
In a shallow dish, combine pineapple juice, soy sauce, brown sugar, oil, garlic, gingerroot, and pepper. Add round steak. Marinate overnight.
Remove meat from marinade. In a small saucepan, heat marinade to boiling.
Rinse frozen vegetables in water to thaw. Pat dry. Heat wok or skillet over medium heat. Add peanut oil and vegetables. Stir fry 5 to 6 minutes or until vegetables are just tender. Remove vegetables to a plate lined with paper towels.
Cut steak into 2-inch strips. Add to wok. Stir fry 5 minutes or until done. Return vegetables to wok. Add marinade. Stir fry 2 minutes.
Serve over cooked brown rice.
